I think the key is for a week - and don't add watery items like cut up tomatoes. I makek salads ahead sometimes and they are good for many days.

Or cucumber....I expect that these have to be kept in a cool place also or in the fridge?

Definitely the fridge! But they will last a few days outside a fridge if you don't have room. Another thing I don't add before is pickled beets -- I have a compartmentalized plastic container that I put the watery stuff in each section then it is super easy to add it when it's time to eat. BTW I did...
