Asparagus Salad


 In a 9x13 pan make the following layers in order:


2 bunches of asparagus, snapped and rinsed and patted dry and cut into bite-size pieces


Red Pepper cut in thin strips (I used a long one, cut the strips ¼” lengthwise and then in half or thirds)


1/4" slices of Sweet Onion broken up (I used 1/4 of a large onion)


2 Cups Seedless Calamatta Olives


1/2 lb. Bulgarian Feta Cheese (it's creamier) crumbled (or chopped--I chop)


1/4 C Balsamic Vinaigrette sprinkled over the top (or to taste)


Nuke (microwave) on high about 3-4 minutes (no longer) to cook the asparagus.  Serve hot or cold.


 


Another no-measure recipe converted!  You can adjust the amounts to your taste.

Question - Do you nuke the asparagus first, then add the other ingredients?
I peel my asparagus. Or, I cut those little triangles off! It looks prettier to me!

No, I nuke the whole dish to marry flavors. I use thin asparagus, and never peel it, just snap it. Thin tastes more delicate to me.

I just cut the bottom of the stalks off and use the whole asparagus....sometimes the bottoms can be tough and stringy on the large ones.....No need to peel, as in most vegetables, the skin has fiber and nutrients.

Of course, you snap the bottom off to where it will snap.
I peel when I am entertaining. I peel the triangles off if it is just me, Jim and/or family. I learned to do this from a gourmet cook. Since I have not been entertaining all that much, I guess I am getting my fiber!
