OK I'm dieting and shouldn't be eating anything like this. But the recipe looks like what was made by my family members when I was a kid so I have to keep it! Eventually I can splurge.


Ingredients
1/2 c butter softened
1 c sugar
2 large eggs
1 ripe banana mashed
8 oz crushed undrained pineapple
2 c flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 c shredded coconut

Instructions
Preheat oven to 350 degrees.
In a large bowl, cream butter and sugar together with a mixer until light and fluffy. Add eggs, one at a time and beat to incorporate.
Stir in banana and pineapple.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Add to wet ingredients.
Stir in coconut flakes/shreds.
Pour mixture into a greased loaf pan (9 x 5). Bake for 60 minutes or until a toothpick inserted comes out clean.
