All the ingredients are mixed together and poured into a pie tin, but when it cooks it forms its own crust with filling :D This has a coconut vanilla taste like a coconut cream pie :D 

Ingredients

2 cups milk
1 cup shredded coconut
4 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
8 Tablespoon butter 
3/4 cup sugar
1/4 teaspoon ground nutmeg

Directions
Place milk, coconut, eggs, vanilla, flour, butter and sugar in blender. Mix well.
Pour into a greased and floured pie plate. Sprinkle nutmeg on top.
Bake at 350 degrees for 45 minutes.

Mona...let us know how yours turns out! Are you going to add the special ingredients? I bet some of that spiced Rum would be really good! Or perhaps a sauce made with "Malibu Rum" and the mango/pineapple pieces!

My cousin has been looking for this recipe for years--she used to make it and the recipe got lost somewhere.  I just gave it to her and and she says it sounds just like the old one.  Big TY from my cousin, Angel!

I made it!! What a great pie! Just like Marge said, "nice burnt crust, custardy interior, not too sweet!" Instantly almost all of it was gone. Jim loves it and so does our friend, Nick! No special ingredients added. But I may add just a tad more coconut. Since I used organic coconut, I think adding a bit more will enhance the taste to a higher level! Even though my cuisinart started to leak AFTER I put the ingredients into it, I had to guesstimate the loss of milk. It didn't matter...

I love to bake!! It's such a science and one must be so exact in measuring and knowing when to mix very well and when not to. It helps me with my anal retentive qualities!

I just looked into the Pages section to see if anyone had a recipe sharing page.....looks like there isn't one! So what section should I put one on? Home and Gardens...family...entertainment.....????? Or should I ask for a new area to be added called  cooking and entertaining?
