I really enjoy TeamNetworks.Net and the great people I have met here!

I'm off to go cook Lasagne for Christmas dinner - it's a multi hour process... This is the only thing I am doing for Christmas this year. I'd say this is the most minimalist Christmas I've ever had in my entire life. It's kind of depressing to think that even when I had nothing I could find a way to make Christmas happen (the cultural parts) but not this year. Wow - that's not progress! lol

-- Well but -- having said that my little family will be here and that will be the biggest blessing. I'll be missing my son but I am so glad for those who are near and dear! What is important about the day, that Christ was born, is something I celebrate every day of my life and I will be thinking of this especially tomorrow because I absolutely would be no where without him in my life and the love of God to get me through this crazy process of living.

I am thankful for my friends and family too, for who would I be without them and the inspiration they give me to go on living and to try to be the best person I can be.

I hope everyone feels very blessed this Christmas! When I think of how many tragedies are going on in the world at any given moment, I can see that most of us are indeed very lucky!

..........On my way to chop, cook, stir, & layer..... Smile

Invited out for Christmas--my contribution is 10 lbs. of mashed potatoes! lol! They cut down the guest list--I used to make 25 lbs. That's a lot of KP duty!

Blessings to all on whatever feast you're planning to have!

WOW - that is a lot lol... I don't know what others do but I scrub the heck out of the skins and leave them on. It cuts down a lot of work. lol.. Plus they taste good too.. I know a lot of people don't and peel them and I can't imagine how long that would take!

It really doesn't take that long, especially if one is praying for people while doing it! I generally zone out, and when I come to it's time to cut 'em and put 'em in a pot...

So you do peel them? It's funny, the fancy restaurants started serving them with peel still on down here and since then nearly everyone I know leaves them on. lol (Try it sometime - it's good and so much easier. There is very little peel left by they time you mash them if you use a mixer. It just gi...

I did try it and didn't like them--it must have been the potatoes I used because they turned out shiny and starchy.

You too? Mark asked in the shout box if there is a reason for Lasagne for Christmas. lol Is that a tradition for you too? I have a reason for cooking lasagne going back to when I was a vegetarian. My version uses veggie patties instead of beef. I was thinking okay no turkey so what looks Christmassy...

sorry for the delayed reply. My reason was simpler. It could be made ahead and always tasted just right.

Aw shoots - I hope it's the best damn good food ever! Truck stops usually do have good grinds. Merry Christmas Randall. I'm glad you are back around so I can wish you that again.

Well thank you, Wanda, and be blessed your own self (family too, of course).
Two fav truck stop meals; Steak and eggs, and biscuits and gravy. That's real food. ;-)
