YUMMY KALE SOUP


 


INGREDIENTS


Olive Oil (to saute onion and garlic)


Onion


 


Garlic (optional)


 


Kale - 1 bunch - Remove tough, center vein - chop bite size pieces


 


Vegetable or Chicken Broth (Use the amount depending on how much soup you are making) You may also add a little water


 


Large can Diced Tomatoes or Plum Tomatoes


 


Teaspoon or Tablespoon Sugar


 


Potatoes - Dice or Cut into quarters (Gold or Red)


 


1 or 2 canned Cannelini Beans - Rinsed Well


 


Italian Seasoning


 


Cayene Pepper (optional)


 


DIRECTIONS


 


Saute Onion and Garlic - Add S&P


 


Add Kale and cook till it shrinks down; Add Sugar to the Tomato can, stir. (If using Whole Plum Tomatoes, chop them up). Then add all other ingredients.


 


Add S&P; Cayenne



Simmer soup till Potatoes cooked - Adjust seasonings
