Marge’s Freezer Pickles


2 qts Cucumbers (about 5 large), sliced thin


1 large onion, sliced thin


2 T salt


2/3 C oil


2/3 C sugar


2/3 C vinegar


1 tsp dill (or to taste)


Mix cucumbers, onion and salt in a large bowl.  Let stand 2 hours.  Drain Well.  Pack in freezer containers leaving 1” head room.


Mix oil, vinegar, sugar and dill.  Pour into each container to cover.  Seal and freeze or refrigerate.


Makes 2 quarts.

They are easy and very good and crunchy...I also add about a tablespoon of mustard seed to the liquid mix for that Kosher taste...

I tried canning some one year - and - I did it all wrong and they turned out awful so I threw them all out. lol Even I could make these! I like the dill idea. Thanks!

When we do the canned variety.... we wash the pickling cukes, put them into hot jars with the dill, chopped garlic. My mom makes Counter dills.... she just makes the hot brine....puts cukes, garlic, Dill  in a large bowl and pours the hot brine over them...lets stand covered with a large plate on top for two days and then we would start eating them! YUM!

I canned peaches, turnips and beets last year. I also canned pear butter and hot salsa....it was part of my stash for survival. Which is useless because I either gave them away or they quickly disappear!
